We made this extra virgin olive oil at our mill in Santa Ynez from olives harvested from a seven-acre orchard in the nearby small town of Ballard. This orchard is on a plateau at an elevation of a few hundred feet and is traditionally farmed. Temperatures typically run from the 80's in early summer to the high 90's during late summer and fall but evenings are typically quite cool, frequently layered with morning fog.

This is a medium strength oil with a hint of cinnamon flavor, perfect for cooking or vinaigrettes.

This is a subtle and buttery oil, with classic but relatively mild Tuscan flavors. It is made of Frantoio, Leccino, Pendolino, and Maurino olives.

This oil has a fruity bright taste with hints of artichoke and cut grass. It is slightly bolder than most Arbequina oils but still with the mildness, lack of bitterness and pungency one expects from an Arbequina. Great for an all purpose high quality extra virgin olive oil in the kitchen. This oil is certified organic by the California Certified Organic Farmers (CCOF) and certified extra virgin olive oil by the California Olive Oil Council (COOC).

Our organic California blend extra virgin olive oil is certified by the rigorous CCOF, like all of our organic oils. It is a mild oil, with very little bitterness or pungency. It contrasts sharply with our other, stronger, organic extra virgin olive oils. This oil is certified organic by the California Certified Organic Farmers (CCOF).

This typical Spanish oil is made predominantly from Picual fruit and has a traditional crisp flavor profile. Hints of apple and toast round out this classic.

This cask-aged balsamic vinegar from Modena Italy is made from acetified grape must matured using the Solera method of blending, transferring the vinegar between a succession of high quality barrels of different sizes. A several year refinement process in high quality wood results in a rich and assertive condiment with a warm brown color and a thick, fluid consistency. The aroma is penetrating and persistent. With port and madeira undertones, it is a classic balsamic taste.
