We made this extra virgin olive oil at our mill in Santa Ynez from olives harvested in the Eastern Santa Ynez Valley from a traditionally farmed two thousand three hundred-tree orchard. It is located in rolling foothills at an elevation of approximately 1,000' at the base of 4,000' - 5,000' mountains. The orchard has a predominantly southwest exposure. During the early summer, temperatures frequently run in the 90's progressing to the low 100's in late summer. Evenings range from very warm to quite cool depending on the marine layer.

This oil has a bright olive/grass nose, a very good balance of components, and medium pungency.
